How do you tell it apart from genuine interest?

What usually happens next?

The high is followed by withdrawal, then by a return. The swing is the point.

The reason love bombing is worth naming is the cycle that tends to follow. The intense phase creates a baseline of attention that feels wonderful. Then it drops, often without explanation, and the drop feels like a punishment for something you cannot identify.

What frequently follows is a return to warmth, usually right at the point you decide to walk. Unpredictable rewards are the most habit forming pattern there is, which is why this can hold people far longer than a straightforwardly bad start ever would.

If you recognise the swing, you do not need to work out whether it is deliberate. The effect on your week is the same either way, and the response is the same too.
